Recipe Of The Month

Chapter 5

Hey hungry foodies, and welcome back to Recipe of the Month! Today, my caffeine-obsessed friends are in luck, as I’ll be introducing you to an amazing iced coffee recipe, complete with delicious vanilla cold foam. Ah, can't you already taste it in your mouth? Of course, we couldn’t have coffee without a treat, so I’ll be giving you my basic (but perfect!) chocolate chip cookie recipe as well : D Let’s begin!

Before we start making our coffee, let’s get a jumpstart with the cookies. It’s a pretty simple recipe, so most of the things you require should already be in your home!

Ingredients:
1 3/4 cups softened butter
2 tsp vanilla extract
3 eggs
1 1/4 cups sugar
3/4 cup brown sugar
2 tsp salt
2 tsp baking soda
5 1/2 cups all-purpose flour
3 cups chocolate chips/chopped milk chocolate

Instructions:
1. Preheat your oven to 350°F.
2. Combine your butter and vanilla extract in a bowl and mix them with a whisk until you get a smooth and creamy consistency.
3. Add your eggs in one at a time. Keep mixing until everything is merged completely to make a liquid mixture.
4. In a separate bowl, pass all of your dry ingredients through a sift and stir everything together.
5. Slowly combine your wet and dry mixtures, folding everything together.
6. For the best part, mix in your chocolate. If you don’t want to chop up chocolate bars, that’s totally fine, but I love the chunks in cookies!
7. Use an ice cream scooper (or your own two hands, it really doesn’t matter) to put your cookie dough onto a parchment-line pan.
8. Bake the cookies for around 15 minutes, 2 minutes more if you want them crunchier on the sides. Make sure to rotate the tray halfway through to guarantee everything is evenly baked!

While those are baking, we can take the chance to make our iced coffee with cold foam! I swear by this stuff, and at the time I’m writing this recipe, it’s exam week and I need coffee more than ever.

Ingredients:
1 cup coffee/cold brew
1 cup ice
3 tbsp heavy whipping cream
2 tbsp milk (I use the regular 2%, but any kind works!)
1 tbsp sugar
1 tsp vanilla extract

Instructions:
1. Make your coffee (or use store bought if you’d like) then let it chill to at least room temperature.
2. Add your ice to a cup, and pour the coffee in the glass.
3. For the cold foam, combine your heavy whipping cream, milk, sugar, and vanilla extract in a jar and use a milk frother to stir. If you don’t have one, you can also put a lid on and shake!
4. Pour the cold foam on top of your coffee and enjoy!

Honestly, I make this different all the time. I don’t even think you need to pay very close attention to the measurements, as long as you know how you like it. If you’re someone for sweeter drinks (which I’m personally not) then some simple syrup or creamer in your coffee will add that missing touch!
