The moment you've all been waiting for, because you have no idea what you're going to have for dinner today!! Looks like this chapter is about to be the hero that saves the day.
First up, we have:
Okroshka (Cold Summer Soup)
Hailing from Ukraine, Okroshka is a cold, refreshing, and simply delicious soup that's not hard to make and will end up being a staple in your kitchen!

The Recipe in question:
Ingredients:
3 potatoes
3 hard boiled eggs
3 small cucumbers
6-8 red radishes
½ pound ham or other cooked meat
1 bunch dill
3 green onions
2 tablespoons sour cream
1 teaspoon Dijon mustard
½ teaspoon salt
3 cups cold, still water
½ cup cold, sparkling water

INSTRUCTIONS:
-Boil whole potatoes until fully cooked, for about 30-40 minutes. Peel them.
-Boil eggs for about 10 minutes. Let them cool down. Peel them.
-Separate cooked egg whites from yolks. Set yolks aside.
-Dice egg whites, cooked potatoes, cucumbers, radishes, and meat into cubes.
-Chop dill and green onions finely.
-In a small bow, add 3 egg yolks, chopped dill, green onions, 2 tablespoon sour cream, 1 teaspoon Dijon mustard, and salt.Mash everything well with a fork until it has a paste-like consistency.
-Divide the chopped ingredients between the serving bowls. Add about 1 tablespoon dill and egg mixture to each bowl. Pour about ½ cups of water and a splash of sparkling water into each bowl.
-Stir and add more salt to taste.
-Enjoy cold!

NOTES:
Liquid - you can use cold Kvas, Kefir, Kombucha, or mineral water.
Serving - the soup is served cold. You can chill it in the fridge before serving or add a few ice cubes.
Meat - you can use any cooked meat you like (beef, chicken, bologna, ham), or make it vegetarian.

Happy summer, everyone! I don't know about you, but I feel like I'm melting under this blazing summer sun. Maybe I'm being a little dramatic. However, we all need ways to beat the heat and stay energised for our summer adventures. That's why I'm excited to share these three simple, refreshing smoothie recipes!

Tropical Summer Fruit Smoothie:
Ingredients:
- 1 1/2 cups frozen mango chunks
- 1 cup of frozen strawberries
- 1 cup of frozen pineapple
- 2 cups of orange juice
- 1 cup of vanilla yoghurt
Instructions:
1. Blend orange juice and fruit in a blender (this may require stirring).
2. Add yoghurt and blend again.
3. Pour into a glass and enjoy!
Strawberry Banana Smoothie:
Ingredients:
- 2 cups strawberries (halved)
- 1 frozen banana (quartered)
- 1/2 cup Greek yoghurt
- 1/2 cup milk
Instructions:
1. Throw it all in a blender and blend.
2. Pour into a glass and enjoy!
Raspberry Banana Protein Smoothie:
Ingredients:
- 1 1/2 cups
- 2 cups of frozen raspberries
- 1 teaspoon of lemon juice
- 1 frozen banana
- 2 tablespoons of honey
- 2 tablespoons of vanilla protein powder
Instructions:
1. Add to the blender in the listed order and blend.
2. Pour into a glass and enjoy!
