Chapter 5
CHRISTMAS GINGER COOKIES
Enjoy these delicious Christmas Ginger Cookies for a magical holiday season!
Yield: ~8 Servings
Prep Time: ~3 ½ Hours
Cooking Time: 5-10 Minutes
-Ingredients-
Sugar - 50 g or ¼ Cup
Honey or Molasses - 30 ml or 2 Tbsp
Water - 5 Tbsp
Cinnamon (ground) - 1 tsp
Ginger powder (ground) - 1 tsp
Cloves (ground) - 1/2 tsp
Butter - 60 grams or ½ Cup
Baking Soda - 1 tsp
Wheat flour - 200 g or ¾ Cup
-Instructions-
1. Pour sugar into a saucepan with a thick bottom. Add honey and water. Stirring constantly, bring the mixture to a boil. All sugar should be completely dissolved before removing from heat.
2. Add the cinnamon, ginger, cloves, butter and baking soda to the blend. A change in color is normal. Stir to dissolve ingredients and cool to room temperature.
3. Add flour in parts and knead dough until soft, making sure it’s not sticky. Assemble into a ball by throwing into your hands. Wrap in plastic wrap and refrigerate overnight or a minimum of three hours. Preheat the oven to 170 degrees.
4. Take the chilled dough out and pinch off pieces to place on baking parchment. Top with another sheet and roll out the dough between. The thinner the dough is rolled, the crispier the cookies will be! Remove the top layer to cut out shapes using cookie cutters. Transfer onto a baking sheet and place in preheated oven for 5-10 minutes.
5. Remove the finished cookies from the paper and cool. Serve with tea, hot chocolate, grog, or mulled wine. In a closed container, ginger cookies can last weeks! Enjoy!
