Stupefy is a spell used to disarm your oponents. Its very useful when your in a dual or if you whant to disarm a death eater.

In Harry Potter Order of Phoenix Hermione Granger uses Stupefy against Ron in a dual and then when they are in the ministry she uses it against a death eater. 

You learn this spell around your fourth or fifth year.
