Magical Cooking
Chapter 1
Mrs. Weasley's Blueberry Muffin
260 g all-purpose flour 2 cups
2 tsp. baking soda 12 g
1/4 tsp. salt
2 large eggs
200 g granulated sugar 1 cup
115 g butter (melted) 1 stick
1 lemon the zest
1 tbsp. vanilla extract
275 g sour cream or yogurt 1 cup
300-400g blueberries 2 cups
Preheat oven to 175 C (350 F).
In a mixing bowl whisk together flour, baking soda, and salt. Sieve it all.
In another mixing bowl beat eggs and sugar until pale and fluffy.
Pour the melted butter, vanilla extract, and lemon zest into the egg-sugar mixture and mix well.
Alternately fold in ⅓ of the flour, ½ the yogurt, another ⅓ of flour, the rest of the yogurt, and finally the last ⅓ the flour.
Fold in the blueberries.
Divide the batter among 12 muffin cups.
Sprinkle some sugar on top of the muffins.
Bake muffins for 25-30 minutes or until a toothpick comes out clean.
Notes: This recipe can also be used for other berries like raspberries or blackberries. Just switch out the blueberries to whatever berries you want to use.
