Baked Pork Pulp (For 4 persons)

Ingredients
1 kilo of pork loin or pulp (rôti de porc in France)
1 large onion
8 medium potatoes
Oregano
Olive oil
1 large cup of meat broth
Full dressing
Cilantro seeds
Colored chili (sweet pepper/paprika)
Coarse salt
Step by step
Spread the condiments all over the pulp (oregano, salt, whole lino, aji de color, coriander seeds), add a dash of oil, the meat broth and let it marinate for a couple of hours or from the night before in the refrigerator.
Preheat the oven to 200°C
Peel and roughly cut the onion and place it at the bottom of a baking sheet to form a "bed".
Add the pulp, peeled potatoes (or skinned if you prefer), and spread the juice from the pork marinade over it.
Sprinkle a little more oregano on all sides and a mini splash of olive oil (optional).
Bake for 1h to 1h30h (depending on the size of the pulp), turning the pulp and spreading the juice over it every 20 minutes or so.
That's it! Cut regular slices and serve them with potatoes or mashed potatoes and don't forget to put some juice on top...delicious!
