Choc chip cookies
These delicious cookies are amazing and incredibly simple, I should know I made some for a friend the day before writing this! They went down a treat!
Equipment-
Mixer
Measuring spoons
2 Bowls
Here are the ingredients for 20 medium sized cookies:
170g unsalted butter, room temp.
150g light brown sugar
50g granulated sugar
1 large egg, room temp.
2 tsp vanilla extract
250g plain flour
2 tsp cornstarch/ corn flour
1 tsp baking soda/ bicarbonate of soda
½ tsp salt
180g chocolate chips (doesn’t matter what type)
Method-
Mix the butter until it is smooth and creamy
Add both sugars and mix until fluffy
Mix in the egg and vanilla
In a separate bowl mix the flour, corn starch, bicarbonate and salt
Slowly mix the dry ingredients into the wet ingredients until combined
Add the chocolate chips
Mix until chips are evenly distributed (roughly 5 minutes)
Cover the cookies with tin foil and place in fridge to cool for 2 hours (this is to make the cookies thicker)
Let sit at room temp for 10 minutes
Preheat oven at 180C/350F
Line 2 baking trays with parchment
Place the dough in teaspoon sized balls onto the parchment
Bake for 8 minutes (remember its better to underbake than overbake cookies!)
Leave to cool for roughly 5 minutes as they will fall apart as thy are super soft otherwise (I know from experience)
These keep for roughly 4 days in an airtight container. Great with milk (if you're basic like me)
