The Immaculate One is a guardian of Fodlan, assumed to be sent by the goddess Sothis to defend the land in times of peril. Not much is known about The Immaculate One, but it is rumored to be a pure white dragon, and the last reported sighting was at The Battle for Garreg Mach, the fight that opened the Serios war.
